I really need to check this out; I haven't read much in regards to Eastern philosophy. All I really know I learned from a couple of brief religion courses. Where would you say is the best place to begin?

First, what parts of Eastern philosophy are you interested in? 

If you answer, Hinduism: I recommend starting with the Upanishads. From these texts spring the ideas of Hinduism that eventually lead to Buddhism (in many of its forms) and Jainism.

If you answer, Buddhism: Start with the Dhammapada it is perhaps the most fundamental and worldwide acknowledged text of Buddhist philosophy and is actually selections from a variety of other texts. The Dhammapada is particular accessible for western readers and some editions come with commentary and original language text.

If you answer, Zen (Buddhism): There are many traditional texts that incorporate the practices and mindset necessary to crack these Zen koans (the traditional mental exercises meant to increase awareness and "mind power", etc.). The "original" Chinese puzzle box is a logic puzzle box.

If you answer something more literary with poetry and stories: then jump into the Threefold Lotus Sutra it bridges the philosophical gap with a more entertaining twist.
